LEM Backwoods Beef snack sticks

Now that my Bradley has a proper home it is now time for some snack sticks and flats. Started with 5lbs ground beef...



LEM mix with pink salt...



5 ounces of water and thoroughly mixed...



After hand mixing in the seasoning and cure...



5lbs fills four trays. 3 sticks and one tray flats. On my trusty frog mats...



Doing 2hours of smoke. 1st hour is Jim Beam Bourbon barrel pucks and 2nd hour is hickory...



3 bubba pucks loaded...



In they go at 170F with the convection fan on...



Auber on watch...



So I figure they will probably be done between 6 to 7 hours.

All finished. Took 7 hours for the total batch. Great smoke flavor...

No casings just used a jerky gun.
