Time to try another new sausage flavor. this time I will be doing Russian Sausage #1 from the Len Poli site.

The spices mixed in after the first grind through a 10mm plate



After a second grind through 4mm plate



Pan frying a test patty



A little smoke in the garage



This recipe doesn't call for smoke. If I fire up the smoker its getting SMOKE!!! After 2 hours of Hickory



After a water bath hanging to bloom



After a few minutes the color changed some





Ready for packaging



Had to take a look at it.



Ready for the freezer

Smells Awesome Art! Not being Russian myself I'm really sure what its supposed to taste like. For my tastes I think it needs something but I'm not sure what. The Lady I made it for Loves it and thinks it tastes perfect. She has a Russian husband so I'm calling it good.
