Making Bacon for a Friend

Warning – Warning – Warning

If you don’t enjoy cooking then don’t bring homemade bacon or smoked cheese to work. I made some bacon a couple of weeks ago using Tenpoint5’s recipe and decided to share it with some co-workers. I have had several requests to make them some. If I buy the belly will you make the bacon and you can keep half of what is made. Of course I said “YES”. One has actually bought the belly and asked me when will it be ready? This cut was called side belly but I did a little research and it appears that it is still the same cut but called differently. I’m sure the experts will clarify this for us. Looks the same to me but it came already cut into four squares.

I think I was able to remove the skin somewhat better this time and save more of the good stuff for the bacon.

This one was also done using Tenpoint5’s posted receipt, only thing I did was to adjust the cure for the weight of the slabs.

You are exactly right;  pork belly, side belly, pork side meat, all the same thing. :)
