Mild Italian Sausage Pizza Brat Sausage Recipe Time

Took my Mild Italian Sausage recipe and used Tenpoint5's Pizza Brate recipe and came up with a nice batch of sausage.

The Sharwoods in this picture was a add on, it's a Thai Red Spicy Curry. (A spicy fragrant Thia style cooking sauce enriched with aromatic lemongrass and lime leaf)



Got everything ground up


Added all the spices and  Sharwoods


Gave it a good mix by hand


Got the Kirby cannon hooked up


Loading the hog casings


Wanted to see if the boy remembered everything about sausage making. He had the first one blow out on him but he recovered very nicely.


After about ten minutes we ended up with just over ten pounds of sausage

Got them put in the deep freeze  ;D



Clean up is a snap with the Kirby cannon, very little waist. Most of it is in the tube and that adds up to a small hamburger size paddy.

SO they spent a few hours outside firming up before I vac sealed 41 sausages. Vac sealed and off to the freezer.

You will really like those brats!  When I get ready to vac seal I wish I had the walk in freezer that you have and when I am finish the temps return to the 80's  ;D
