Money shot. Casings from
Nepas were really nice. They gave it a nice firm Texture.
I'm really pleased with these.

Casings are real nice Rick. I didn't poach bath these, took them all the way. The meat to fat ratio is perfect too.

cheese, jalapanos and elk.  whats not to like.  i like the cheese in it.   :)  i was just talking to my wife after seeing this great post.  i love italian sausage, breakfast sausage, brauts and hot dogs.  it was be cool to make my own.  need to start doing a little research...... ::)

I joined the Bradley forum when I got the smoker as a gift. I thought it would be cool to learn how to make keilbasa.
And now, I can't stop... ???  ;D

It's a lot of fun. I love it.
