Weeknight MAK dinner...

Another super easy but tasty dinner coming off the MAK!  Tonight we had a cornbread enchilada bake.

Started with my favorite 17” Lodge CI pan:


2 lbs of ground beef swimming in enchilada sauce:


Topped with a couple cups of grated cheese:


Topped with a couple boxes of cornbread mix:


Onto the upper grate of the MAK at 350°. I love how much headroom the 2 Star has!


Workin’ his magic!


Tada!!


It was quite tasty :)

When you have a family the size I do, there ain’t nuthin’ left for your charity... sorry buddy!  Heck, there ain’t even leftovers for daddies lunch tomorrow :’(

It is a good thing you can cook in XL portions!

You know- that dish would be a fantastic recipe...could you post it in the recipe section? It is a great comfort food from my growing up in Texas.....

My mama used to make that when I was coming up & it is one of my favorite dishes.
I haven't had it in years. Thanks for posting it . It looks great.  :thumbup:

BTW, how long did you cook it.

Thanks, Tee! Didn’t really follow a recipe for this meal. But, here is pretty close to what I used:
2 lbs ground beef
20 ounces enchilada sauce
2 cups of grated cheese
2 boxes Jiffy cornbread mix (told you it was a simple meal...lol)
Can of sliced olives (my wife slipped those in when I had my back turned)
Optional: 2 cans of cream of corn (didn’t use corn this time)
Layer as shown in pics and bake for 30-40 mins at 350°

Of course you can easily cut this recipe in half and prepare it in a smaller baking dish.

Nope... a quick 2-3 min wipe down with SD-20 and a soft damp cloth after each cook and she's good to go :)
