Here is the finished product cooling before being wrapped in plastic wrap for a day or two rest in the frig to allow the smoke to mellow and even out before slicing.

Thanks to everyone for your interest.  I'll conclude the thread with this.  Cold smoking in 85 degree air temp is a challenge but it can be done without adding ice, etc in the tower.  The temp in the tower basically never got above 90 degrees with one exception when I turned my back for 10 minutes. 

Huge thanks go out to NePaS and Squirtthecat.  I bounced questions and ideas off of them for 3 days on how to keep the temps down in the tower without adding ice.  Those guys know what they are doing!  Fun project for me.  Smoking meats when everything goes according to plan gets boring for me after a while.  It's when things turn left that it gets fun for me and knowing I have guys like Rick, Pat, Hal and Chris that I can call on and we go to work on solving the problem.

That's what these Forums are really all about.  Establishing friendships and knowing you can call on them and vice versa.

That's a very interesting method. The bacon sure looks nice and dense after hanging in between the smoke sessions.
