Anniversary Fajitas

Yesterday, 8/24, was our 28th and being the simple folk we are we stayed home and hade some fajitas. Beef for me and Chicken for her. My daughter had both.

I tried a new rub for this and used it on both the skirt steak and the chicken. Both had a really nice flavor. I also made my homemade Pico de Gallo and Guacamole with the help of my daughter.

1 TBSP Olive Oil
1 TBSP Lime juice
1, or more, Garlic Clove(s), finely minced, chopped, sliced, however you like them
½ TSP of each of the following:
Chili Powder, cumin, red pepper flacks, black pepper and sea or kosher salt.
Rub it on the meat and let it set for a couple of hours if you have the time.

Thanks Pam! My son was watching me use the iPad looking at the forum and he saw the avatar. He yelled "that's me!" And I said "yes it is". Then I looked at him and thought time to update the picture ;)
