Cider Mill Bacon.

I asked Cliff for his Cider Mill recipe and w/o hesitation it was in my PM. There were two measurements, one for up to 12lbs and one for 7lbs. Once I trimmed the belly it weighed real close to 9bs, so I took the 12lb one and quartered it as close as I could.

This is my third belly and trimming that skin off is not easy. You got to admire guys like Cliff, Tenpoint and others that make it look so easy.

I already put them in a boiling pot of water for 30 minutes and in the fridge getting dry. I am going to try using TBE to make them to keep the smell out of the house.
