Wife has been buying and eating Turkey pepperoni slices and really likes them for snacks. Grandsons were over and the little one said these are really good did Grandpa make them? Hmmmmm Guess the little tyke thinks all sausage in our house is homemade

I never tried my hand at pepperoni before and go looking thru my recipe vault and I come across a recipe that my friend Nepas gave me a while back. It was for 10 LB (8lb of beef and 2lb of pork). I cut the recipe down for 2 1/2 pounds and used 2 1/2 ground turkey breast. I have no idea how this is going to turn out. I added some paprika to the recipe to give it a bit more color.
Used salt, dextrose, corn syrup solids, cayenne pepper, anise seed, red pepper flakes. curry and fermento. Used 1/2 tsp of cure.

All mixed up and back into the fridge for overnight. Not enough time to smoke to day. Will smoke tomorrow
