Turkey Pepperoni

Wife has been buying and eating Turkey pepperoni slices and really likes them for snacks.  Grandsons were over and the little one said these are really good did Grandpa make them?  Hmmmmm Guess the little tyke thinks all sausage in our house is homemade  ;D  I never tried my hand at pepperoni before and go looking thru my recipe vault and I come across a recipe that my friend Nepas gave me a while back.  It was for 10 LB (8lb of beef and 2lb of pork).  I cut the recipe down for 2 1/2 pounds and used 2 1/2 ground turkey breast.  I have no idea how this is going to turn out.  I added some paprika to the recipe to give it a bit more color.

Used salt, dextrose, corn syrup solids, cayenne pepper, anise seed, red pepper flakes. curry and fermento.  Used 1/2 tsp of cure. 



All mixed up and back into the fridge for overnight.  Not enough time to smoke to day.  Will smoke tomorrow

Got them stuffed in 38mm Fibrous casings that are 24 inches long.  The package says they will hold 1.5 pounds of meat.  Had to hog ring the top and put a string in them then hog ring the bottom when stuffed.  They are too long to go into the Bradley using the V-Tray but they hang OK as I am using the AMPS with hickory pellets. 

Fried up a little sample and the wife took a taste and her eyes opened wide and said "that is so good".  That is a good sign.

Taking on a bit of color but not sure how much color it will take on being turkey and not pork or beef.  Never did turkey before so this is a learning experience.

Sliced the pepperoni up this afternoon and wife vac packed them as fast as I could get them thru the slicer.  They turned out great and she really likes the flavor.  Will be making them again but my try to use turkey thighs next time.  I think they need just a touch of fat for my taste.  Main thing is I made these for her and she likes them so that is a win win situation.
