Half an Avocado, scoop out a little of the meat (not all of it!) crack a small egg into the halved Avocado and top with precooked bacon pieces. Bake in 425 oven for 15min. If you like, during the last minute top with a little pepper-jack cheese and allow to melt. Then serve! The avocado u scooped out can be made into a spicy guacamole and added as a final touch to top it off.

Jack I love that idea. I love avocados. Here is one that I made on the infuser. Was smoked and coated with Panko, topped with grated Parmesan and Jalapeño salt.... And yes that is a egg yolk in the center...





I made two of them and the second one made for some fantastic guacamole ;)

Cuz, that looks delicious. Avocado with egg, bacon, and cheese is a wonderful combination. Do you happen to have a recipe for the fried avocado's that are served in Tex-Mex restaurants around here? I also like chris becker's idea of cold smoking the avocado for smoked guacamole. I just like this whole avocado idea.
