I hope so becasue after years of wood burners and than converting to pellet smokers for the ease I have an inkling to smoke on wood again.  Really looking forward to seeing your cooks.

I get it! I have a MAK pellet pooper that I love...but it can definitely be a bit boring...lol!!

The M1 grill looks like something I need. This the first time I've heard of and seen one and I want one!
So what do you think of it? Is it worth the money?
It's extremely versatile. It's VERY well designed and runs super clean. It doesn't take up half of your patio. It'll cook plenty of food for a decent sized gathering. It's built like a tank. I personally think it's a very nice grill/smoker. If you spend the $, I do not think you will be disappointed.

The million dollar ? For me is how evenly does it cook from the right to left side?
When cooking with wood in the reverse flow pattern, I've noticed that the higher the temp, the less even the heat from side to side. A dome temp of 275, might give you a 30 degree variance. But when cooking at 225, I find the temps to be pretty darn even side to side.

I had Travis from M Grills cut and send me a 10 gauge baffle that has helped quite a bit with the higher temps/even heat cooks.

Also, no matter what temp you are cooking at, once the thick steel gets hot, you will find much more stable side to side temps.

Is it something they are gonna adress on there grills?

The baffle is simply a sheet of 10 gauge steel. I place it on the charcoal grate, right over the reverse flow opening. It simply diffuses the heat. Don't have a pic of the baffle, but here's one where I placed a GrillGrate over the reverse flow opening, just to see if it made a difference, before having Travis cut and send me a solid steel baffle. Works pretty good.

Many would not look at this as a defect in engineering. There are times (chicken) when it can be very beneficial to have one side of the pit a bit warmer. And as mentioned, when cooking at lower temps (225°ish), the heat is pretty darn even.

With the baffle I had cut, I left a 1" opening at the front/rear of the pit, allowing the heat to gently come up on the reverse flow opening side.

The reverse flow opening is directly under the GrillGrate you see in the pics.
