I would love to try and get some of the 100% flavor wood Pellets to you guys in NorCal, Oregon and Washington to see what you think of the difference in Flavor.  The customers that have ordered from me that have been using the Bear Mountain and Lil Devils, say it is like night and day.  I have heard that the Alder based pellets are very good with fish but don't deliver the full flavor to Ribs, Butts, chicken,etc,etc that 100% Hickory, Maple, Cherry or the Perfect Mix does..

Are the BTU's there with 100% say cherry. Isn't the reason they use alder or oak is for the BTU's?

I am actually just using 100% Cherry for the first time, tonight.  Just did some Salmon at 325 so not a good test, but it climbed to that temp quite quickly. I have used  the other 100% flavors, Hickory, Maple, many times with no temp problems and great results.  I have heard some stories of people having trouble reaching 500 degrees with Perfect Mix but I never have.  Might be a cold weather issue or something.  When I want to to steaks or a tri tip, I usually use 100 oak anyway.  A lot of people like to take the 100% flavors and mix them with the 100% oak and make there own blend with more Flavor wood than the usual 30 or 40 percent that most have.  Next week I should be getting in some of the new 100% Mesquite and 100% Apple, really looking forward to that..
