Beef jerky

I have some thinly sliced beef marinating for jerky tomorrow.

I know it is supposed to have limited fat content.  What I don't know is... Why...

Can you tell me?

The fat is what goes rancid. Lean = clean.

DING DING DING!! Give the man a Kewpie doll! When I make muscle jerky there is NO fat.Round is my meat of choice,the lower the grade the better.

You wont be able to eliminate all the fat. Anyways your jerky wont be around long enuff for any of it to go bad.   :D :D

And....*IF* you want to maximize the length of time it remains fresh: vacuum pack it in portions, and keep it in the freezer.  Cold slows downer stops virtually all known microbes metabolic activity.


Geek  explanation: That is why we freeze meat. Not to preserve the meat itself - but to stop the microbes ( mostly falculative anaerobic bacteria ).

Thanx y'all...the beef is in the MES.

I will vacuum seal when I take it out, leaving one package out for now...others in the freezer for later.
