Boiling chicken ?

Hey yall! I have a question. When I boil chicken, a white "foam" comes to the top just before it starts to boil. Kind of like it does when boiling fresh peas. What is this? I always scoop it off  :-\ . I told my wife, I BET somebody on here knows!

Proteins, lipo-proteins and some fats. They are harmless - but do look a little ugly.

It can be skimmed off to keep the broth clear, or blended in at the end of the cookie you are going to add any flour, milk or cream that would cloud the broth anyway.
