Did something different today.

Well, I did something different today mostly because I am lazy. My wife wanted me to make Chicken Picata today with my gravy and pasta noodles but that is a lot of work. So what I did is pound the chicken breast flat as I usually do. I season the  breast with a little rub and placed a slice of provolone cheese on the breast and then put on finely chopped jalapeno pepper, poblano pepper, onion, minced garlic and a slab of butter. Then I covered the whole inside with mozzarella cheese. I rolled the chicken and pinned it closed with toothpicks. Then I wrapped each chicken breast with two strips of bacon.





Then I got the smoker ready and lit the A-MAZE-N 12 inch tube.



Here are the four rolled chicken breasts on the grill and we also wrapped 10 ears of corn with butter inside the tin foil.





Of course you cannot enjoy a good smoke without a refreshment when outside temperature is 90 degrees.



Got some good smoke today between the Yoder and the A-MAZE-N tube. I do not know if you can see it here.



I did not get any pictures of this on the plate because the family arrived and was hungry.

Information: cooked for 3 hours at 225 degrees until the internal temperature hit 165. I also had the corn on at the same time for 3 hours at the same temperature as the chicken. The corn was delicious.

This was very simple and a lot easier than the Chicken Picata. I actually would make this again. Of course, the bacon added that extra flavor and tasted pretty good sprinkled with the rub.

Now, I am out of bacon. So tomorrow, I'll have to run and get more bacon at the store. Can't have the refrigerator without a supply of bacon in case of.

Really good job of rolling and securing the chicken rolls.  I have problems with that sometimes.  It's never as neat and as easy as shown on TV.  Like you, I usually pound my chicken breast down to flatness.  Dee

VODog, that looks like something we would enjoy.  After you wrapped them with bacon, what did you sprinkle on?  Was it plain paprika?

PMillen: I make my own rub and it does have a lot of paprika, brown sugar, salt, pepper, cayenne, onion powder, garlic powder, and chili powder. Sometimes cumin, and whatever hits my fancy.
