Wondering if anyone has any experience with this method of meat acquisition?

Its sort of like crowd funding for beef. You pre-buy what cut or cuts of beef you want. And once an entire cow's allotment is sold, then they slaughter and ship it.  I find the process interesting.

Yes sir, I have purchased numerous times through CC. I find the beef to be top notch. I prefer my beef to be grain finished, so I have to pay attention to that. Much of it is 100% grass fed. I tend to prefer grass fed/grain finished. They sell both types.

Very cool concept. But damn it is not cheap. Wish the pricing was better as I wouldn't mind trying it

They want $94 for an 11 pound brisket, $8.50 per.

Might as well get wagyu from:
http://www.huntspoint.com/bbq-meats/wagyu-brisket-kobe-brisket.html

Its roughly only 10-11 bucks a pound. Plus only 10 dollars shipping.  It is located in New Hampshire. While I might live in the state, that's over 2 hours away and more than 10 bucks in gas.

One of the guys at work has a small farm.  Last year 3 guys went in on the cost of 2 calf's and supplemental feed to get them to slaughter weight and split the meat between them.  If he does it again, I'm in!!!

I cannot find beef ribs here in Albuquerque. Sometimes Costco has them, but they haven't had them for a few months. My brother-in-law told me he's had good experiences with the Crowd Cow beef short ribs, so I just placed an order. Cost is about $15/lb. for grass-fed Angus-Hereford beef. They have a $25 first-time-buy discount and free shipping after $99, so you can drive the price down a bit.

Can't wait to get some ribs on the smoker!

I don't know the difference between grass-fed and grain-fed beef, as I've never specifically bought one or the other.

Grain fed: is the most tender and the most fat.

Grass fed: has better flavor, because the cows walk around a lot more (more myoglobin in the meat), but this also makes them leaner and tougher.

Grass fed/grain finished: gives you the best of both; better flavor and a little more tender and fatty than straight grass fed.

Costco does not do much if anything with beef ribs, at least the one by me. Our local Publix sells short ribs with the English cut (I think that is what it is called, they are cut in about 3-4 inch length.) I ask them for a package of uncut short ribs. They come in 2 packs with 4 ribs to a pack. These come out very tender if you cook them low and slow and are very meaty. There is usually one "runt" in the pack but they are a good buy.

Same thing with Sam's.  They usually cut them up Flanken style, but will sell the whole, unopened cyropac if you ask.  I still have some from my last Restaurant Depot trip, but I'm going to give Sam's ribs a try after that.
