We both had errands after work so dinner had to be quick. I found a one pound Sous Vided chuck steak in the freezer so while this was heating up I added one can of Herdez Salsa Casera to some brown rice and water in my Zojirushi rice cooker. When this was done the steak got a good searing in a cast iron pan, and a can of Old El Paso refried beans with jalapenos was warming. Plated with Herdez Ranchera Sauce on steak and a bit on rice plus an egg to top it all off. Was a most tasty meal! :thumbup:

But - if I ate it...I would need to remain..."close to home" ;) ;) ;) 8)

Never done a chuck steak.  Was eying some chuck roasts to either sous vide or to smoke.

I had 3 chuck steaks, each about a pound. Put a bit of evoo on, and sea salt. Vac bagged individually.
Cooked SV @131F for 24 hours. They came out great. This one came from freezer , into SV 130F for an hour twenty minutes then browned in lard quickly on each side. Salt pepper and garlic and on with the meal!
If you do chuck roasts....my opinion go 36 hours at 131F for tenderness.

Try cold smoking your chuck roast for a couple hours then sous vide it for 48 hours. You will be amazed at the flavor and how easy it is to cut. You can cut it with a fork.
