Not eating as much as I used to and the wife never has overstuffed on ribs so when it's just me and her always some leftover ribs. I usually eat them next day.
Sweetie and I are in the same boat so we always cook for leftovers.  She vac packs put them in freezer. When time to eat we simmer in about 140 degree water for 20 minutes and then reset the ribs on a smoker for 30 to 60 minutes.

I have a freezer full of leftovers. Well, until the kids visit.. 8) I normally will take them out of the freezer
and put them into a Sous Vide bath and reheat them that way. No need to defrost.  ;)

That sounds like more efficient and controlled way than thawing in low simmering water as we have been doin.
Give me more info on what you are using.

Art I am going to give you 3 links to Sous Vide controllers that I own or owned.  I currently have: http://www.sousvidesupreme.com/Shop/Water_Ovens-/EN-US/SousVide_Supreme_Demi-31/Product.aspx

I also own this one and use it quite a lot:  http://smile.amazon.com/Anova-Culinary-Bluetooth-Precision-Cooker/dp/B00UKPBXM4/ref=sr_1_1?s=home-garden&ie=UTF8&qid=1459816107&sr=1-1&keywords=anova

I did own this one but once I got the Sous Vide Demi I sold it:  http://smile.amazon.com/Dorkfood-Sous-Vide-Temperature-Controller-DSV/dp/B0088OTON4/ref=sr_1_12?s=home-garden&ie=UTF8&qid=1459816178&sr=1-12&keywords=sous+vide+cooker

I got the Sous Vide Demi as a refurb from their site at half the price. They occasionally have big sales.  Hope this helps!

For a long cook over 24 hours I do prefer the Sous Vide Demi. Only because I don't have a enclosed container for the Anova. That is next on my to get list.
For normal cooks I prefer the Anova since it is a lot smaller and you can basically take it with you wherever you go.  A big plus on the Anova that it is Bluetooth controlled.
If I only had to have one it would be the Anova.

Got it and thanks.  Look it up and I like being able to put it in any size pot I want.
Question is, is it worth the money just to warm up left overs?

You can do amazing things by pre cooking sous vide and then finishing on the grill. It's a great tool to add to your arsenal.
