We had a craving for meatloaf so I decided to thaw out some ground chuck and go for it.
I didn’t follow any specific recipe, just a combination of several I have used before.
2 lbs. Ground Chuck
2 eggs
¼ cup of Sweet Baby Rays BBQ sauce
¾ cup Panko
1 tsp minced garlic
1 can of diced tomatoes with green chilies
1 package of Lipton Onion soup mix
1 tsp soy sauce
1 tsp black pepper
1 tsp saltI mixed it all together and put it in the refrigerator for a few hours. I removed it from the refrigerator
and gave it a small dusting of BBQ Savor. I coated a couple of baking potatoes with olive oil and sea
salt and wrapped in foil.

Put onto the Weber Performer, using KBB and some hickory chunks.

Glazed with some Sweet Baby Rays at 145 internal. Potatoes pulled off the grill.

We got our fill of some real tasty meatloaf plus I have some for some meatloaf sammies tomorrow
along with half my baked potato.
